This coffee is a blend of two different regions in Guatemala. Huehuetenango
brings a lively acidity and a sweet fruity note, while Jalapa brings a rich,
chocolatey quality to this coffee. Small producers in Huehuetenango harvest
carefully and process their cherry at small wet mills, then deliver parchment
coffee to us at our warehouse in San Antonio Huista.
Many of our favorite Jalapa coffees come to us through the efforts of Marvin
Carias and his family. Las Brisas is the name of a microregion in this area
where the family farms high-quality coffees. Marvin processes the coffees at
his wet mill where they are patio dried and then stored until they are ready
to deliver to us.
This coffee is decaffeinated by Swiss Water at their state-of-the-art facility
in British Columbia, Canada. The process uses only water and their green
coffee extract to naturally remove the caffeine from the green coffee,
preserving its inherent characteristics.
