This, is Colombian coffee at its finest. This ISN’T the Colombian coffee you see plastered across every bag of coffee on a supermarket shelf or proudly displayed on a truck stop coffee pot. So, what separates specialty Colombian coffee from the countless cheaper alternatives?

First, this is Direct Trade, farmed and produced by Rodrigo Palaez (pictured) . He and his staff take the utmost care, time, and research when growing, harvesting, and sorting this coffee to ensure only the best reaches your cup.

Second, this is grown on higher elevation than almost all other cheaper mass produced Colombian coffee you will run into. Pictured, you can see a snap of the farm, gorgeous mountains, fresh air, and cooler temps allow the perfect growing conditions.

And last but not least, we the roaster, know exactly how special this coffee is and pride ourselves in roasting it to maximum deliciousness. We keep it in the lighter roasted spectrum to let the natural quality of the coffee shine through. This season, we were lucky enough to get our hands on the natural processed version of this, as well as the washed processed version! We highly recommend trying them both to better understand how the exact same coffee from the same farm can taste so different just due to processing differences!

Now a short description of the coffee flavor profile, beings this is the Naturally processed version, you can expect the coffee to lean fruitier and sweeter with a slightly denser mouthfeel. We get exciting nuances of blueberries, cooked peach, and apples!

In addition to running his farm, Rodrigo is also a dentist in a near by city called Manizales, and he also writes a column about coffee in his local newspaper (La Patria). He is community minded, and he has a passion for working with smaller coffee producers around Colombia.
